I’ll start us off.
I would have lunch with Amy Carmichael. A single lady from a while back who rescued Indian children from temple prostitution. She was a “mother” to hundreds of orphans. One of my heroes. Brave, independent, and radically loving like Jesus.
I’d eat on some garden rooftop in one of those Italian cities along the ocean that my two sisters have told me about. I would eat a massive hot fudge brownie with icecream and fudge and whipcream (yes, for the entire meal, just that). This dessert would have just been invented to contain only 100 calories and have all the vitamin A of two bags of carrots. Yup.
I would have lunch with my mom’s dad who died when she was 13. I never got to meet him (obviously) but have heard lots of stories about him. My mom tells me she wishes I could have met him because I would have LOVED him. I would pack up sandwiches, fruit and chips and a couple of sodas, throw them in the cooler and have lunch while fishing at his favorite lake. :0)
