Low-Cal-Super-Cheap-Vegetarian Soup

Enjoy this super-cheap recipe for Black Bean soup that was inspired from the magazine Eating Well.  Each serving is under 200 calories and costs about 70 cents.   Even better, it only took about 10 minutes to make, from start to finish.   That’s my kind of meal.  Enjoy.

Black Bean Soup

Sautee a chopped onion, few stalks of chopped celery stalks and a few minced garlic cloves in a bit of oil in the bottom of a soup pot.

Throw in three cups of water, three cans of black beans (drained), 1/2 cup salsa, one can of rotel tomatoes, some salt, pepper, cumin and red pepper flakes (if you like spicy).

After that has heated through, take out half of the mixture and puree it in a blender for a few seconds, then dump it back into the soup pot.

Serve with crushed tortilla chips, dollop sour cream, sprinkle of cheese, and chopped cilantro.
